Ingredients and Supplies

(see recipe card at the bottom of this post for measurements and details)

Ingredients:

  • Round tortilla chips: the chips mimic taco shells and provide crunch. I like to use a large round tortilla chip, but you can make them even smaller with these bite-sized round tortilla chips like shown in these images.
  • Butter (melted): helps the seasonings stick to the chips and adds richness.
  • Garlic powder: boosts flavor with a classic pizza seasoning note.
  • Dried oregano: brings that signature “pizza” aroma and taste to these bites.
  • Pizza sauce: delivers a saucy base flavor while also softening the chips just enough to fold. You could substitute the red sauce for an Alfredo sauce to make white pizza taco bites. I like to serve some extra pizza sauce on the side for dipping.
  • Shredded Italian blend cheese (mozzarella, Asiago, Parmesan, etc.): melts beautifully for a gooey texture and adds a complex cheese pizza flavor.
  • Mini pepperoni (or cut-up pepperoni pieces): classic topping, that adds salty, meaty, spice to each bite. You can leave the pepperoni off or substitute them with ground cooked Italian sausage or any other favorite pizza toppings. Just make sure they’re in mini pieces.
  • Ranch dressing (for serving): a popular pizza dipping sauce that adds creamy, tangy contrast to the savory pizza bites.

How to Make Pizza Taco Bites

  • Preheat oven to 350°F. Line a large baking sheet with parchment paper or spray with non-stick cooking spray.
  • In a small mixing bowl, melt the butter. Whisk in the garlic powder and dried oregano.
  • Dip each chip into the melted butter mixture to coat and then let excess drip off

  • Place on the prepared baking sheet.
  • Spread about 1/2 teaspoon of pizza sauce down the middle of each chip being sure to spread all the way to the edges of the chip. (The sauce will help soften the middle of the chip as they bake so it’s easy to fold into a taco shape without breaking the chip.)
  • Sprinkle a few teaspoons of the shredded cheese over the sauce on each chip.
  • Arrange 3-4 mini pepperoni down the middle of the cheese on each chip.

Storage

These bites are best enjoyed right after baking. Leftovers may be stored in an airtight container in the refrigerator for up to three days. Reheat on a prepared baking sheet in a 325°F oven until cheese is melty again.
