All About the Spread

Pickled beets are one of my favorite accompaniments. I love to pair them with a fancy goat cheese on a crostini or enjoy them in a scrumptious salad with greens and grains. Diced pickled beets are also one of our favorite toppings when we have build-your-own mediterranean chicken bowls for family dinner. They just elevate the eating experience!

These Are Your Grandmother’s Beets

When I’m craving and cooking with beets, I reach for Aunt Nellie’s jarred beets. They’re always in our pantry and the quality is so reliable. Which is probably why Aunt Nellie’s has been America’s favorite brand of jarred beets for more than 90 years.

Ingredients:

  • Cream cheese (softened): rich, creamy base of the beet spread.
  • Aunt Nellie’s Diced Pickled Beets: the star of the spread! Adds vibrant color plus tangy-sweet flavor.
  • Honey: balances the tang of the beets with a subtle sweetness.
  • Fresh lemon juice: freshens the spread and keeps all the flavors bright.
  • Chopped fresh dill: gives an herby pop and pairs nicely with the salmon.
  • Salt & Pepper: rounds out the flavors in the spread.
  • Assorted bagels: mix it up with a variety of bagels — mini and full-size, plain, everything, sesame, and more — so everyone can build their perfect sandwich!
  • Aunt Nellie’s Baby Whole Pickled Beets: they bring an earthy-sweet tang to the fruit skewers that balances out the bright, juicy sweetness of the grapes and strawberries. Together, it’s a mix of savory, tart, and sweet in one skewer.
  • Green grapes: a crisp and juicy addition to the fruit skewers as well as a great side to the breakfast sandwiches.
  • Whole strawberries: a bright and sweet addition to the fruit skewers that pair so nicely with the tang of the baby beets.
  • Aunt Nellie’s Sliced Pickled Beets: they give a tangy-sweet bite to the bagel sandwiches as well as complement the creaminess of the spread and the crunch of the cucumber and onions.
  • Capers: they give a salty and briny punch that’s a classic addition to a bagel with lox.
  • Everything bagel seasoning: wakes up the sandwich with a little crunch and savory depth of flavor from the garlic and onion.
  • Cucumber (thinly sliced): adds a crisp, refreshing crunch to a bagel sandwich.
  • Red onion (thinly sliced): adds a sharp bite and balances the richness.
  • Smoked salmon/lox (pre-sliced): a luxurious addition to an epic breakfast bagel sandwich with a smoky richness.
  • Radishes (thinly sliced): bring a peppery crunch and beautiful color.
  • Avocado (thinly sliced): a creamy, mellow counterbalance to all the other texture and flavor options on the board.
  • Lemon (sliced into thin rounds): adds brightness with a squeeze of freshness.
  • Hard-boiled eggs (halved): a nice protein option to complete the breakfast experience.
  • Microgreens: adds a fresh finish to the sandwich.
  • Fresh dill sprigs (for garnishing): a delicious garnish that ties the flavors together beautifully.

How to Make a Bagel Breakfast Sandwich Board with Beet Cream Cheese Spread

  • Make the Beet Cream Cheese Spread: Place the softened cream cheese, drained diced beets, honey, lemon juice, chopped dill, salt, and pepper into a food processor.
  • Process until mostly smooth, scraping down the sides and pulsing towards the end so a few small beet bits remain visible for texture.
  • Transfer to a serving bowl, cover, and refrigerate for at least 30 minutes so the spread can firm back up into that classic cream cheese texture.
Steps to make beet cream cheese spread.
  • Build the Board: Place the Beet Cream Cheese Spread in the center of a large round board. Garnish with diced beets, a drizzle of honey, and chopped fresh dill.
  • Arrange the bagels in a cluster along top left side of the board.
  • Make the fruit skewers by threading the fruit onto each skewer in this order: 1 baby beet, 1 green grape, 1 whole strawberry, 1 green grape, 1 baby beet. Repeat with remaining skewers until you have 6 total.
  • Put the fruit skewers, sliced pickled beets, capers, everything bagel seasoning, and honey in separate small serving dishes and place around the remaining edges of the board.
  • Fan out the cucumber rounds, red onion rings, smoked salmon, radishes, avocado slices, and lemon rounds in neat clusters around the bowl of beet cream cheese spread.
  • Fill in the board with halved hard-boiled eggs, a bunch of green grapes, and microgreens.
  • Sprinkle the hard-boiled eggs and smoked salmon with a little everything bagel seasoning. Sprinkle the smoked salmon with some chopped fresh dill.
  • Tuck in sprigs of fresh dill across the board.
  • Encourage guests to build their own breakfast bagel sandwiches with the Beet Cream Cheese Spread and all the beautiful fixings.
How to build a Breakfast Bagel Sandwich Board with Beet Cream Cheese Spread.

Make a Bagel Sandwich!

  • Toast a sesame seed bagel until golden.
  • Spread a generous layer of Beet Cream Cheese Spread on both halves.
  • Layer on cucumber slices, smoked salmon, red onion, and capers.
  • Sprinkle with chopped fresh dill and everything bagel seasoning.
  • Top with microgreens.
  • Close the sandwich, slice in half if desired, and enjoy!

Ingredients

  • Beet Cream Cheese Spread (makes 3 cups)
    • 16 ounces cream cheese, softened
    • 1 (16 ounce) jar Aunt Nellie’s Diced Pickled Beets, drained
    • 2 tablespoons honey, plus extra for garnish
    • 1 tablespoon lemon juice
    • 1 tablespoon chopped fresh dill, plus extra for garnish
    • 1/2 teaspoon kosher salt
    • 1/4 teaspoon black pepper
  • 10 bagels (sesame, everything, plain, etc.)
  • 6 fruit skewers made with:
    • 12 Aunt Nellie’s Baby Whole Pickled Beets
    • 12 green grapes
    • 6 whole strawberries
    • 6 wooden skewers
  • 8 Aunt Nellie’s Sliced Pickled Beets, drained
  • 1/4 cup capers
  • 2 tablespoons everything bagel seasoning
  • 2 tablespoons honey
  • 1 small cucumber, thinly sliced
  • 1/2 red onion, thinly sliced
  • 12 ounces pre-sliced smoked salmon (lox)
  • 5 radishes, thinly sliced
  • 1 small avocado, thinly sliced
  • 1 large lemon, sliced into thin rounds
  • 5 hard-boiled eggs, halved
  • Bunch of green grapes
  • 1 cup microgreens
  • Fresh dill sprigs, for garnishing
