Description

Trail Mix Quinoa Energy Bites are healthy, hearty energy bites packed with quinoa, oats and a variety of nuts with peanut butter and honey holding it all together. They’ll give you fuel for a great workout or just a crazy busy day!


Ingredients

  • 1 cup peanut butter (creamy or crunchy)
  • 1/2 cup honey
  • 2 cups cooked quinoa
  • 1 and 1/2 cups quick oats
  • 1/2 cup almonds
  • 1/2 cup pistachios
  • 1/2 cup dry roasted peanuts
  • 1/2 cup dried cranberries


Instructions

  1. In a large bowl or electric mixer, stir together peanut butter and honey until smooth.
  2. Add remaining ingredients and mix until well combined.
  3. Roll mixture into 2 tablespoon sized balls and place on a parchment-lined baking sheet. Refrigerate for about 30 minutes and then transfer to an airtight container for up to 5 days.
