Description
Trail Mix Quinoa Energy Bites are healthy, hearty energy bites packed with quinoa, oats and a variety of nuts with peanut butter and honey holding it all together. They’ll give you fuel for a great workout or just a crazy busy day!
Ingredients
- 1 cup peanut butter
- 1/2 cup honey
- 2 cups cooked quinoa
- 1–1/2 cups quick cooking oats
- 1/2 cup almonds
- 1/2 cup pistachios
- 1/2 cup dry roasted peanuts
- 1/2 cup dried cranberries
Instructions
- In a large bowl or electric mixer, stir together peanut butter and honey until smooth. Add remaining ingredients and stir until well combined. Roll mixture into 2 tablespoon sized balls and place on a parchment-lined baking sheet. Refrigerate for about 30 minutes and then transfer to an airtight container.
Notes
Store in the airtight container in the refrigerator for up to 5 days.
