Add instant fireworks to your 4th of July cookout with this Fourth of July Cole Slaw. Bright red strawberries, fresh blueberries, white almond slivers and salty feta cheese make this flag-shaped slaw a flavorful and patriotic side dish.

  • 1 (14 ounce) bag coleslaw
  • ½ cup blueberries
  • 1 (16 ounce) container strawberries, sliced in quarters
  • ½ cup crumbled feta cheese
  • ¼ cup slivered almonds
  • star crackers

Coleslaw Dressing:

  • ¼ cup plain yogurt
  • 2 tablespoons honey
  • 2 tablespoons lemon juice

Blueberry Balsamic Drizzle: (makes ¼ cup)

  • 3 tablespoons wild blueberry preserves
  • 1 tablespoon olive oil
  • 2 teaspoons balsamic vinegar

  1. Wash and prep fruit. Lay on a paper towel to dry.
  2. To make coleslaw dressing, whisk the yogurt, honey and lemon juice together in a large mixing bowl.
  3. Add the bag of coleslaw to the bowl with the dressing and toss to coat evenly.
  4. Spread the coleslaw in an even layer on a rectangular platter.
  5. Place a row of strawberries along the bottom of the coleslaw covered platter, followed by a row of crumbled feta.
  6. Fill the top left corner with blueberries.
  7. Finish the stripes with another row of  strawberries, a row of slivered almonds and one last row of strawberries.
  8. To make the blueberry balsamic drizzle, whisk the wild blue preserves, olive oil and balsamic vinegar together in a small bowl.
  9. Drizzle the arranged star-spangled slaw with about 1 tablespoon of the blueberry balsamic drizzle.
  10. Pour the remaining blueberry balsamic drizzle in a small jar and add the star crackers to a star-shaped bowl for serving.
  11. Serve and enjoy!

All of these ingredients can be tossed together and enjoyed served pre-mixed in a bowl instead of as a flag shape.
