Description

Spring into your holiday with this Giant Easter Egg Fruit Pizza! With a sugar cookie crust, sweet icing and plenty of colorful fresh fruit, it’s cute, festive and so delicious!


Ingredients

Icing:

  • 8 ounces cream cheese, softened
  • 2 cups powdered sugar
  • 1 teaspoon pure vanilla extract
  • Fresh Fruits:
    • Kiwi
    • Clementines
    • Blueberries
    • Strawberries
    • Blackberries
  • 2 tablespoons honey, for brushing over fruit

Instructions

  1. Preheat the oven to 350°F. Line a 16×12-inch baking sheet with parchment paper.
  2. Place the cookie dough on the prepared baking sheet and form it into the shape of an egg that is about 1/4 inch thick, 15 inches long and 11 inches wide.
  3. Bake until golden brown around the edges and set in the middle, about 18 minutes, rotating the pan halfway through the baking time.
  4. Remove and let cool completely.
  5. Make the icing: In the bowl of an electric mixer fitted with the whisk attachment, beat the cream cheese and powdered sugar until smooth. Add the vanilla and beat again until well incorporated.
  6. Spread the icing over the cooled egg-shape cookie.
  7. Decorate the cookie with fresh fruits to look like an Easter egg.
  8. Brush the honey on the fruit, if desired.
