Spring into your holiday with this Giant Easter Egg Fruit Pizza! With a sugar cookie crust, sweet icing and plenty of colorful fresh fruit, it’s cute, festive and so delicious!
Ingredients
- 1 (16.5 ounce) package refrigerated sugar cookie dough, softened (or 2 heaping cups homemade sugar cookie dough)
Icing:
- 8 ounces cream cheese, softened
- 2 cups powdered sugar
- 1 teaspoon pure vanilla extract
- Fresh Fruits:
- Kiwi
- Clementines
- Blueberries
- Strawberries
- Blackberries
- 2 tablespoons honey, for brushing over fruit
Instructions
- Preheat the oven to 350°F. Line a 16×12-inch baking sheet with parchment paper.
- Place the cookie dough on the prepared baking sheet and form it into the shape of an egg that is about 1/4 inch thick, 15 inches long and 11 inches wide.
- Bake until golden brown around the edges and set in the middle, about 18 minutes, rotating the pan halfway through the baking time.
- Remove and let cool completely.
- Make the icing: In the bowl of an electric mixer fitted with the whisk attachment, beat the cream cheese and powdered sugar until smooth. Add the vanilla and beat again until well incorporated.
- Spread the icing over the cooled egg-shape cookie.
- Decorate the cookie with fresh fruits to look like an Easter egg.
- Brush the honey on the fruit, if desired.
