Description

This Candy Corn Snack Board is such a trick, but what a nice treat it would be at your Halloween party to have something healthy for people to snack on amongst all the Halloween sweets!

Ingredients

  • 2 cups cauliflower
  • 2 cups orange baby carrots
  • 1 large orange bell pepper, sliced
  • 1 cup mini orange tomatoes, whole or halved
  • 2 cups yellow baby carrots
  • 1 large yellow bell pepper, sliced
  • 1 cup mini yellow tomatoes, whole or halved
  • 1 large bunch black concord grapes
  • 2 cups blackberries
  • 20 fresh black figs
  • 20 dried black figs
  • 2 large black plums, sliced
  • 1/2 cup Everything But The Bagel Yogurt Dip (hummus and/or ranch dressing), plus more for refilling
  • 1/2 cup Candy Corn Trail Mix, plus more for refilling

Instructions

  1. On a large wood board (I used a 24″ x 18″ wood board) start building the candy corn shape.
  2. Make a triangle of cauliflower near the top and middle of the board.
  3. Then add orange baby carrots, orange bell pepper slices and mini orange tomatoes for the orange layer.
  4. Next place yellow baby carrots, yellow bell pepper slices and mini yellow tomatoes for the yellow layer to complete the “candy corn” shape.
  5. Now place two small serving bowls in the top left and right corners of the wood board as place holders that will be filled with the dip and Candy Corn Trail Mix. You could also use ranch or hummus in place of (or in addition to) the yogurt dip. I ended up adding some ranch and chocolate hummus to the side of this board when I served it.
  6. Fill the empty space on the board with black concord grapes, blackberries, fresh black figs, dried black figs and black plum slices.
  7. Finish by filling the serving bowls with the dip and trail mix.
