Instructions

How to Set the Spread:

Make the popcorn and candy champagne flutes. Fill each flute with ¼ cup popcorn, ¼ cup caramel corn and 2 tablespoons M&M’s candies. Set them on the spread table.

Prep all of the sweet and savory fondue dippers. These can be prepared in advance and covered or stored in the refrigerator until you’re ready to add them to the spread table.

To Boil the Potatoes:

Add the potatoes to a saucepan and cover with water. Bring the water to a boil. Salt the water and simmer the potatoes for about 10 minutes, until just tender. Drain potatoes and return them to the pot to dry. Toss with a little olive oil to keep them from drying out.

To Parboil the Broccolini and Cauliflower:

Fill a saucepan 3/4 of the way full with water and bring to a simmer. Salt the water and then add the cauliflower for 2 minutes. Remove the cauliflower with a slotted spoon and add the broccolini to cook for 2 minutes. Remove the broccolini with the slotted spoon to a plate with the cauliflower.

Make the bowtie pasta and meatball skewers. Put them on a platter with the cheese tortellini,  boiled potatoes, salami cubes, and pumpernickel bread cubes.

Prepare the fondues and keep them warming over low heat.

Put all of the remaining fondue dippers in various bowls and serving dishes on the spread table.

Add the fondues in fondue pots or slow cookers to the spread table.

Serve the spread with champagne and plenty of fondue forks for everyone to have one for the cheese fondue and one for the chocolate fondue.

Notes

  • Encourage guests to spear the dippers with fondue forks then dip and swirl in the fondue of choice with a stirring motion.
  • As the host, stir the fondues often and add additional wine to the cheese fondue or milk to the chocolate fondue to thin them out, if necessary.
