American Flag Fruit Pizza with Cream Cheese Frosting

Description

Celebrate the Fourth of July in sweet style with an American Flag Fruit Pizza! A sheet pan sized sugar cookie topped with rich cream cheese frosting and decorated with fresh berries and cookie stars. The Stars and Stripes have never tasted so good!


Ingredients

Cookie Base:

  • 1 cup (2 sticks) unsalted butter, softened
  • 2 cups white granulated sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 4 cups all-purpose flour
  • 3 teaspoons baking powder
  • 1 teaspoon kosher salt

Fruit Pizza:

  • 54 blueberries
  • 15 strawberries, thinly sliced

Frosting:

  • 2 (8 ounce) packages cream cheese, softened
  • 3 cups powdered sugar

Instructions

  1. Preheat the oven to 350°F. 
  2. Spray a 16×12-inch sheet pan with nonstick cooking spray and then line with parchment paper.
  3. To make the cookie bars: In the bowl of an electric mixer fitted with the paddle attachment, beat the butter and sugar until creamy.
  4. Beat in the milk and vanilla extract and then the eggs, one at a time, until the mixture is well combined.
  5. Add the flour, baking powder and salt. Mix on low speed until a thick dough forms.
  6. Press 4.5 cups of the sugar cookie dough evenly into the prepared sheet pan. Roll the remaining 1/2 cup of sugar cookie dough out onto a lightly floured surface and cut into star shapes with a star cookie cutter that’s about 1.5-2 inches in diameter.
  7. Bake the sheet pan cookie until golden brown all over and starting to crack in the middle, about 22-24 minutes, rotating the pan halfway through the baking time.
  8. Remove the cookie from the oven and let cool completely.
  9. Bake the star cookies for 6-8 minutes or until cookies are set and starting to turn light brown around the edges.
  10. In the bowl of an electric mixer fitted with the whisk attachment, beat the cream cheese and powdered sugar on low speed until just combined and then on high speed until smooth and spreadable. 
  11. Spread the icing evenly over the cooled sheet pan cookie.
  12. Arrange the blueberries in the top left corner to create the blue rectangle of the American Flag.
  13. Layer strawberry slices in lines to create the stripes of the American Flag. 
  14. Place the star-shaped sugar cookies on top of the blueberries.
