Description

Dates, whole grain oats, peanut butter and flax make these Simple Energy Bites a delicious and nutritious boost for on-the-go families. Perfect for a quick breakfast, energizing afternoon snack, or healthy lunchbox treat, they’re a family favorite!


Ingredients

  • 2 cups rolled oats
  • 1 cup peanut butter (creamy or crunchy)
  • 15 pitted dates
  • 2 tablespoons honey
  • 2 tablespoons whole ground flaxseed meal

Instructions

  1. In a food processor, add the oats, peanut butter, dates, honey and ground flaxseed meal.
  2. Pulse until the ingredients are well combined and stick together. *Stir in your mix-ins, if desired.
  3. Form the mixture into 2 tablespoon sized balls.
  4. Store the bites in a sealed container in the refrigerator for up to a week.

Notes

Optional Add-Ins: Stir in up to 1/2 cup of mix-ins to flavor the bites, if desired. Great mix-ins are: chocolate chips, white chocolate chips, peanut butter chips, M&M’s, dried fruits, nuts, seeds
