Ingredients

For the Pretzel Dough

  • 1 package (2-1/4 teaspoons) active dry yeast
  • 1 tablespoon granulated sugar
  • 1 cup warm water
  • 2 tablespoons olive oil
  • 2 and 1/4 cups bread flour, divided
  • 1 teaspoon kosher salt

OR

  • 16 ounces prepared store-bought pizza dough

For the Baking Soda Wash

  • 2 tablespoons water
  • 1 teaspoon baking soda

For the Egg Wash

  • 1 large egg
  • 1 teaspoon water

For the Cinnamon Sugar Topping

  • 2 tablespoons unsalted butter, melted
  • 1/4 cup granulated sugar
  • 1 tablespoons ground cinnamon

For Serving

  • Cream Cheese Frosting, for dipping

Instructions

  1. Preheat the oven to 400°F. Line a baking sheet with parchment paper.
  2. If making the homemade dough: In a large bowl, combine the yeast and sugar with the warm water. Let proof for about 10 minutes.
  3. Stir in the olive oil, 2 cups of the flour and the salt with a wooden spoon until the flour is well incorporated, about 2 minutes. The dough will be slightly sticky.
  4. Transfer the dough to a well-floured work surface and knead with floured hands until a smooth ball forms, adding up to the remaining 1/4 cup flour, if needed. If using prepared store-bought pizza dough, start here.
  5. With floured hands, stretch the dough into a 50-inch-long rope. Shape the rope into a pretzel on the prepared baking sheet.
  6. Make the baking soda wash: Whisk together the baking soda and warm water until combined. Brush the mixture all over the pretzel-shaped dough.
  7. Make the egg wash: Whisk together the egg and water until well combined. Brush the egg wash all over the pretzel.
  8. Bake on the middle rack for about 15 minutes, rotating the pan halfway through, until the pretzel is golden brown all over.
  9. Make the cinnamon sugar: In a small bowl, whisk together the granulated sugar and cinnamon.
  10. Brush the melted butter all over the warm baked pretzel, then generously sprinkle with the cinnamon sugar.
  11. Serve warm with Cream Cheese Frosting for dipping.
