Description
Part pico de gallo, part bean dip, Baked Bean Cowboy Caviar is a fresh, flavorful, savory and subtly sweet party dip or side.
Ingredients
- 1 (15 ounce) can baked beans, undrained
- 1/2 cup diced red bell pepper
- 1/2 cup diced green bell pepper
- 1/2 cup sweet kernel corn, drained
- 1/2 cup diced red onion
- 1/2 cup diced Roma tomatoes
- 1 large jalapeno, diced (with or without seeds)
- 2 cloves garlic, minced
- 1 tablespoon lime juice
- 1/2 cup chopped fresh cilantro
- Salt and black pepper, to taste
Instructions
- In a large mixing bowl, stir together the baked beans, red bell pepper, green bell pepper, corn, red onion, tomatoes, jalapeno, and garlic.
- Add the lime juice and cilantro, gently tossing to combine well. Salt and pepper to taste.
- Keep refrigerated. Stir well before serving. Serve with chips for dipping.
