Description

Part pico de gallo, part bean dip, Baked Bean Cowboy Caviar is a fresh, flavorful, savory and subtly sweet party dip or side.


Ingredients

  • 1 (15 ounce) can baked beans, undrained
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced green bell pepper
  • 1/2 cup sweet kernel corn, drained
  • 1/2 cup diced red onion
  • 1/2 cup diced Roma tomatoes
  • 1 large jalapeno, diced (with or without seeds)
  • 2 cloves garlic, minced
  • 1 tablespoon lime juice
  • 1/2 cup chopped fresh cilantro
  • Salt and black pepper, to taste

Instructions

  1. In a large mixing bowl, stir together the baked beans, red bell pepper, green bell pepper, corn, red onion, tomatoes, jalapeno, and garlic.
  2. Add the lime juice and cilantro, gently tossing to combine well. Salt and pepper to taste.
  3. Keep refrigerated. Stir well before serving. Serve with chips for dipping.
