Description
With a smooth chocolate coating over a creamy peanut butter center, these 3-Ingredient Peanut Butter Cups are two bites of pure chocolate peanut butter bliss.
Ingredients
- 1 cup peanut butter, creamy or crunchy
- 1/2 cup powdered sugar
- 2 cups semi-sweet chocolate chips
Instructions
- In the bowl of an electric mixer fitted with the paddle attachment, beat together the peanut butter and powdered sugar until well combined.
- Line a mini (24 cup) muffin pan with liners.
- Fill each cup of the mini muffin pan about 2/3 full of the peanut butter mixture, pressing the mixture down into the cup.
- Place the mini muffin pan in the freezer for 30 minutes to flash freeze them.
- When you’re ready to coat the peanut butter cups in chocolate, place 1 cup of the chocolate chips in a microwave-safe bowl and microwave in 30 seconds intervals until melted and smooth, stirring between each interval.
- Remove half of the flash frozen peanut butter cups from the freezer. Unwrap each cup from its liner. Use a fork to dip and coat each cup completely in the melted chocolate, letting any excess chocolate drip back into the bowl before transferring the coated cup to a parchment-lined sheet pan.
- Repeat with the remaining 1 cup of chocolate chips and remaining peanut butter cups that are in the freezer.
- Let the chocolate peanut butter cups set at room temperature until the chocolate is completely set. Store in an airtight container at room temperature for up to 2 weeks.
