Description

With a smooth chocolate coating over a creamy peanut butter center, these 3-Ingredient Peanut Butter Cups are two bites of pure chocolate peanut butter bliss.


Ingredients

  • 1 cup peanut butter, creamy or crunchy
  • 1/2 cup powdered sugar
  • 2 cups semi-sweet chocolate chips

Instructions

  1. In the bowl of an electric mixer fitted with the paddle attachment, beat together the peanut butter and powdered sugar until well combined.
  2. Line a mini (24 cup) muffin pan with liners.
  3. Fill each cup of the mini muffin pan about 2/3 full of the peanut butter mixture, pressing the mixture down into the cup.
  4. Place the mini muffin pan in the freezer for 30 minutes to flash freeze them.
  5. When you’re ready to coat the peanut butter cups in chocolate, place 1 cup of the chocolate chips in a microwave-safe bowl and microwave in 30 seconds intervals until melted and smooth, stirring between each interval.
  6. Remove half of the flash frozen peanut butter cups from the freezer. Unwrap each cup from its liner. Use a fork to dip and coat each cup completely in the melted chocolate, letting any excess chocolate drip back into the bowl before transferring the coated cup to a parchment-lined sheet pan.
  7. Repeat with the remaining 1 cup of chocolate chips and remaining peanut butter cups that are in the freezer.
  8. Let the chocolate peanut butter cups set at room temperature until the chocolate is completely set. Store in an airtight container at room temperature for up to 2 weeks.
