What’s not to love about a good chicken salad? Whether enjoyed for an easy lunch or quick dinner, it’s so satisfying. I’m excited to share my favorite chicken salad recipe with y’all. It comes together in no time and tastes so great by itself or as a sandwich.

If the chicken is already cooked, it will take you less than 10 minutes make! I like to make a batch at the beginning of the week so that we have some on hand for when we need a quick meal that everyone loves. It has such an amazing balance of crunchy to creamy textures and savory to sweet flavors! The crunch from the apples, green onions and candied pecans combined with the juicy grapes, tender chicken and creamy light dressing creates the most perfect texture and taste.

The dressing is simple yet oh so flavorful. You can make it with light mayonnaise or Greek yogurt along with lemon juice, garlic and dijon mustard. It’s creamy enough to bring all of the salad ingredients together nicely, but not too creamy that it would make the chicken salad heavy or overwhelm it. It’s savory tartness compliments the other ingredients so well.

When my days get busy, I can always rely on this chicken salad recipe for a quick, tasty and nourishing meal. Enjoying it on a buttery croissant, between two slices of bread, or just on a piece of bibb lettuce is the perfect lunch or dinner. It’s just so versatile. One of my favorite ways to enjoy this easy chicken salad is with fresh sliced tomatoes and crispy baked bacon between two slices of whole grain bread for a healthy and filling meal. Served with a side of fresh fruits and veggies. Oh my yum!

Description

The Best Easy Chicken Salad that is sure to satisfy. It’s fresh, flavorful and absolutely delicious!


Ingredients

Dressing:

  • 1/2 cup light mayonnaise or Greek yogurt
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • 1 teaspoon dijon mustard
  • salt and pepper, to taste

Salad:

  • 3 cups cooked chicken, chopped
  • 1/2 cup red grapes, quartered
  • 1/2 cup apple, chopped
  • 1/2 cup green onion, diced
  • 1/2 cup candied pecans, chopped

Instructions

  1. In a small bowl, stir together the mayonnaise, lemon juice, garlic and dijon mustard. Salt and pepper to taste.
  2. In a large mixing bowl, add the cooked chicken, grapes, apple, green onion and pecans. Stir to combine. Pour the dressing over the chicken mixture and gently stir until well coated.
  3. Taste and adjust seasonings, as needed.
  4. Serve as a sandwich on croissants, bread, or wrapped in lettuce cups.

Notes

This chicken salad keeps well in the refrigerator for 3-4 days.

  1. How do you prepare the chicken for this salad? Do you use chicken breasts that are baked ahead, rotissierie chicken, canned? I have never attempted chicken salad but this one looks delicious!
