We love a good cocktail and this Sparkling Raspberry Mojito is one that we enjoy often. The balance of tart, sweet, citrus, and mint flavors compliment the rum so perfectly. Then it’s topped with Prosecco bubbles to make it all the more enjoyable. It’s a festive cocktail that’s perfect for spring through summer sipping!

Sparkling Raspberry Mojitos

This twist on the classic mojito is made a little tart with raspberries and extra refreshing with a splash of Prosecco. It’s so perfect to serve for a spring brunch, poolside in the summer or just to make for yourself to enjoy on the patio with a good book. It’s so easy to make yet so satisfying to sip on.

And the beauty of this cocktail is that you can make it for a crowd by prepping everything in a pitcher ahead of time, except for the Prosecco, and then top with the Prosecco once you’re ready to serve them. I love a good cocktail that can be made in batches so we’re not playing bartender the whole party.

Description

These refreshing Sparkling Raspberry Mojitos are made with muddled mint, raspberries, lemon, simple syrup and rum then topped with Prosecco for a simple, gorgeous and satisfying sip!


Ingredients

  • 6 fresh mint leaves
  • 4 fresh raspberries
  • 2 fluid ounces white rum
  • 1 fluid ounce fresh lemon juice
  • ½ fluid ounce simple syrup
  • Crushed ice
  • Prosecco

Instructions

  1. Muddle the mint, raspberries, white rum, lemon juice and simple syrup in a large glass. Add a scoop of crushed ice and top with prosecco.
  2. Garnish with raspberries and fresh mint. Cheers!

    1. Hi Sharon! For the rum, you can mix white grape juice, pineapple juice, apple juice, apple cider or water with a small amount of almond extract. You can replace the champagne with ginger ale, sparking white grape juice or sparkling apple cider. Hope this helps. Enjoy!
