Roasted Broccolini

Description

Fresh lemon, garlic and simple seasonings make this tender, crisp Roasted Broccolini a flavorful vegetable side you’ll make again and again.


Ingredients

  • 1 pound broccolini (about 2 bunches)
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 2 large lemons
  • Kosher salt
  • Ground black pepper

Instructions

  1. Preheat the oven to 425°F. Line a rimmed baking sheet with foil and spray with nonstick cooking spray.
  2. Trim off the ends of the broccolini and pull off any leaves.
  3. Place the broccolini on the prepared baking sheet and drizzle with olive oil. Toss to coat.
  4. Cut one lemon in half widthwise and juice one half of the lemon over the broccolini on the sheet pan. Reserve the other half to juice over the broccolini after it is roasted.
  5. Slice the other lemon into thin slices, discarding the ends.
  6. Add the minced garlic to the broccolini and toss to coat again.
  7. Spread the broccolini into a single layer and add the lemon slices amongst them.
  8. Sprinkle the broccolini and lemon slices generously with salt and pepper.
  9. Roast the broccolini, tossing a few times, until slightly charred, about 10-15 minutes.
  10. Transfer to a serving platter and squeeze the remaining lemon half over the top and serve.
