Description
Pepperoni and melting mozzarella wrapped up in bite size tortilla chips, these Pizza Taco Bites are the perfect finger food for snacking or a casual get-together.
Ingredients
- 30 unbroken round tortilla chips
- 1/4 cup butter, melted
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1/3 cup pizza sauce, plus more for serving
- 1 and 1/4 cups shredded Italian blend cheese (mozzarella, Asiago, Parmesan, etc.)
- 1/2 cup mini pepperoni or cut-up pepperoni pieces (120 total)
- Ranch dressing, for serving
Instructions
- Preheat oven to 350°F. Line a large baking sheet with parchment paper or spray with non-stick cooking spray.
- In a small mixing bowl, melt the butter. Whisk in the garlic powder and dried oregano.
- Dip each chip into the melted butter mixture to coat and then let excess drip off before placing on the prepared baking sheet.
- Spread about 1/2 teaspoon of pizza sauce down the middle of each chip being sure to spread all the way to the edges of the chip. (The sauce will help soften the middle of the chip as they bake so it’s easy to fold them into a taco without breaking the chip.)
- Sprinkle a few teaspoons of the shredded cheese over the sauce on each chip.
- Arrange 3-4 mini pepperoni down the middle of the cheese on each chip.
- Bake the chips for 5-7 minutes or until the cheese is melted. Remove from the oven and fold each chip into a taco shape before transferring to a serving plate.
- Serve with more pizza sauce and Ranch for dipping.
