The Perfect Amount of Sweetness

They have the perfect amount of sugar to bring out the sweetness of the peaches and the texture of the oatmeal makes them irresistible! They would be great alongside a cup of coffee for a morning treat or an afternoon snack.

Plentiful Peaches Equal a Baking Bonanza!

Peaches are still perfect and plentiful. So I’m taking full advantage of the season and baking with them as much as possible. I’m dreading the day when a huge pile of peaches no longer greet me as I walk into the market.

Peaches just make me smile, especially when they are baking in my oven. There’s just something about that baked peach smell and taste that is so comforting and delicious.

Trial, Error and Success!

These yummy snack bars came about one morning when I added some fresh peaches and a dash of cinnamon to my oatmeal for breakfast. I immediately became fixated with idea of baking something with peaches and oatmeal. I’m in love with this combination!

Well, a few batches of peach oatmeal cookies later, I decided that bars might be the better route to go. The cookies spread out too thin and were weighted down by all the oats and peaches. They tasted amazing, but didn’t look so amazing!

So I mixed up another batch of dough and pressed it into a baking dish instead. That did it! They turned out just like I had wanted them to. Peach perfection!

A Sweet Breakfast Bar

If you like a breakfast a little on the sweet side, you will love these peach oatmeal breakfast bars. The oatmeal makes them so hearty, and the peaches bring so much sweetness and flavor. Soft, chewy, sweet, cinnamon and bursting with fresh peach flavor. Could they be any better?

Tip: How to Pick a Ripe Peach

Look for a consistent peachy color all over and then squeeze gently to make sure it’s not too firm or already mushy. A good peach will smell fragrant and have no bruises.

What Do I Need to Make Peach Oatmeal Bars?

  • All-purpose flour
  • Old-fashioned oats
  • Baking powder
  • Salt
  • Ground cinnamon
  • Unsalted butter, softened
  • Granulated sugar
  • Brown sugar
  • Large eggs
  • Vanilla extract
  • Fresh peaches
  • Cinnamon sugar
  • 13 x 9 baking pan

A Peach is a Peach

Your peaches definitely don’t have to be perfect to make this peach coffee cake. In fact, overripe peaches work beautifully. You can substitute frozen peaches slices, too. Just thaw completely before cutting. You can also use drained canned peaches that have been sliced and chopped.

How to Make Peach Oatmeal Bars

  • Preheat oven to 350°F. Lightly grease a 13×9-inch baking pan. Set aside.
  • In a large bowl, whisk together the flour, oatmeal, baking powder, salt, and cinnamon. Set aside.
  • In the bowl of an electric mixer, cream the butter and sugars until light and fluffy. Add eggs and vanilla, and beat until well combined, about 1 minute. Gradually add flour mixture, beating until just combined.

  • Stir in chopped peaches.
  • Spread batter evenly into prepared pan.
  • Arrange peach slices evenly on top of batter.
  • Sprinkle with cinnamon sugar.

How to Serve and Store Peach Oatmeal Bars

Once cool, cut Peach Oatmeal Bars into 18 equal bars. Serve slightly warm or at room temperature! You’ll be grinning from ear to ear!

Store in the refrigerator in an airtight container for up to 5 days.

To freeze, cut into bars and place in a freezer safe baggie with a sheet of parchment between each bar. Freeze for up to three months.

  • 11/2 cups all-purpose flour
  • 11/2 cups old-fashioned oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 cup (2 sticks) unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1 cup dark brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla
  • 11/2 cups peeled & chopped fresh peaches (about 2 large)
  • 1 large peach, thinly sliced
  • 2 tablespoons cinnamon sugar, for dusting

Instructions

  1. With just a couple changes these were perfect for us. Only used one cube of butter but about 3 cups of peaches that I mixed in with the liquids to help chop them. I topped the finished batter with about half a cup of chopped walnuts. My finished bars were more cake like but lots of wonderful peach flavor. I will make this again!

    1. Hi Jill! Did you follow the ingredients and instructions exactly? They should be a very chewy and moist bar. I’m wondering if your peaches weren’t ripe enough to add good moisture to the batter?

      1. Hi Monica! Were your peaches ripe and juicy? The moisture from the peaches is key to making them chewy. And you used old fashioned oats? Old fashioned oats take longer than quick cooking oats to absorb moisture so they are key to creating a chewy bar. Hope this helps!

  3. This looks like a winner! Have you tried freezing them? I know you can freeze just about anything but I’m always scared to try it.. I have soooo many peaches I wanted to use up and I’d like to try new things.. I feel like this would be a great quick and go breakfast for my husband.

    1. Hi Chelsea! I haven’t tried freezing these bars, but I think they would freeze great. Just let them cool completely, cut into bars, wrap individually in plastic wrap and place down in a freezer-safe baggie to store in the freezer. Let defrost, unwrapped, at room temperature. Enjoy!
