Mini S’mores Cookie Pies

Description

A fun and easy twist on classic s’mores baked as adorable mini pies with rich chocolate chip cookie dough, gooey marshmallows, and a sweet chocolate drizzle.


Ingredients

  • 6 Keebler mini graham cracker pie crusts
  • 1 and 1/4 cups chocolate chip cookie dough (store-bought or homemade)
  • 1 and 1/2 cups mini marshmallows
  • 2 tablespoons graham cracker crumbs, for garnishing
  • Chocolate syrup, for drizzling


Instructions

  1. Preheat the oven to 350°F.
  2. Place the mini pies on a rimmed baking sheet. Fill each mini pie crust with about 3 tablespoons of chocolate chip cookie dough, pressing the cookie dough evenly into the crust.
  3. Bake the pies on the center rack of the oven for 15-18 minutes, or until the cookie dough is set and beginning to turn a light golden brown.
  4. Remove from the oven and top each pie with about 12 mini marshmallows.
  5. Return the pies to the oven, placing them on the top rack this time. Bake for an additional 3-5 minutes, or until the marshmallows are puffed and lightly toasted. If you want the marshmallows more charred on top, you can broil them for a few minutes, but watch closely to prevent burning.
  6. Remove from the oven and let set for about 5 minutes before drizzling each pie with chocolate syrup and sprinkling with graham cracker crumbs.
  7. Serve warm with a spoon and enjoy!
