Description
With a sweet caramelized top and soft warm insides, these Maple Roasted Sweet Potatoes will have them coming back for more!
Ingredients
- 2 pounds sweet potatoes
 - 4 Tablespoons unsalted butter, melted
 - ½ teaspoon kosher salt
 - ½ teaspoon pumpkin pie spice
 - ¼ cup maple syrup
 - 16 fresh sage leaves, for garnishing
 
Instructions
- Preheat the oven to 425°F and coat a rimmed baking sheet with nonstick cooking spray.
 - Scrub the sweet potatoes and dry well. Cut into ½ inch thick slices.
 - Place the sweet potatoes in a single layer on the prepared baking sheetl.
 - In a small bowl, whisk together the melted butter, salt, pumpkin pie spice and maple syrup. Brush half of the maple butter mixture over the sweet potatoes.
 - Bake for 20 minutes. Flip and brush with the remaining maple butter mixture. Bake for another 20 minutes, until the potatoes are tender and caramelized.
 - To serve, stick a small leaf of fresh sage into the top of each sweet potato to look like a pumpkin.
