Description

With a sweet caramelized top and soft warm insides, these Maple Roasted Sweet Potatoes will have them coming back for more!


Ingredients

  • 2 pounds sweet potatoes
  • 4 Tablespoons unsalted butter, melted
  • ½ teaspoon kosher salt
  • ½ teaspoon pumpkin pie spice
  • ¼ cup maple syrup
  • 16 fresh sage leaves, for garnishing

Instructions

  1. Preheat the oven to 425°F and coat a rimmed baking sheet with nonstick cooking spray.
  2. Scrub the sweet potatoes and dry well. Cut into ½ inch thick slices.
  3. Place the sweet potatoes in a single layer on the prepared baking sheetl.
  4. In a small bowl, whisk together the melted butter, salt, pumpkin pie spice and maple syrup. Brush half of the maple butter mixture over the sweet potatoes.
  5. Bake for 20 minutes. Flip and brush with the remaining maple butter mixture. Bake for another 20 minutes, until the potatoes are tender and caramelized.
  6. To serve, stick a small leaf of fresh sage into the top of each sweet potato to look like a pumpkin.
