Description
Wake up to a delicious and filling Hash Brown Breakfast Casserole. Topped with a mixture of egg, ham, cheese and fresh peppers, it’s the perfect make ahead breakfast for busy families.
Ingredients
- 9 frozen hash brown patties (I use Trader Joe’s brand)
- 1 cup diced ham
- 1/2 cup diced red bell pepper
- 1/2 cup diced green bell pepper
- 1/2 cup diced yellow onion
- 2 cups shredded monterey jack and cheddar cheese blend
- 5 eggs
- 2 cups milk
- 1 tsp salt
- 1/2 tsp garlic powder
- 1/2 tsp pepper
Instructions
- Preheat the oven to 350°F. Spray a 9×13-inch baking dish with nonstick cooking spray.
- Arrange the frozen hashbrown patties side by side to cover the bottom of the dish.
- Cover the patties with the diced ham, red bell pepper, green bell pepper and yellow onion.
- Sprinkle everything evenly with the shredded cheese.
- In a large bowl, whisk together the eggs, milk, salt, garlic powder and pepper until well combined.
- Pour the egg mixture over everything in the baking dish.
- Cover the baking dish with foil and bake for 30 minutes. Uncover and bake for an additional 15-20minutes or until the eggs are set and the casserole is golden around the edges.
- Allow to cool 5 minutes before slicing and serving.
