Description

Wake up to a delicious and filling Hash Brown Breakfast Casserole. Topped with a mixture of egg, ham, cheese and fresh peppers, it’s the perfect make ahead breakfast for busy families.


Ingredients

  • 9 frozen hash brown patties (I use Trader Joe’s brand)
  • 1 cup diced ham
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced green bell pepper
  • 1/2 cup diced yellow onion
  • 2 cups shredded monterey jack and cheddar cheese blend
  • 5 eggs
  • 2 cups milk
  • 1 tsp salt
  • 1/2 tsp garlic powder
  • 1/2 tsp pepper

Instructions

  1. Preheat the oven to 350°F. Spray a 9×13-inch baking dish with nonstick cooking spray.
  2. Arrange the frozen hashbrown patties side by side to cover the bottom of the dish.
  3. Cover the patties with the diced ham, red bell pepper, green bell pepper and yellow onion.
  4. Sprinkle everything evenly with the shredded cheese.
  5. In a large bowl, whisk together the eggs, milk, salt, garlic powder and pepper until well combined.
  6. Pour the egg mixture over everything in the baking dish.
  7. Cover the baking dish with foil and bake for 30 minutes. Uncover and bake for an additional 15-20minutes or until the eggs are set and the casserole is golden around the edges.
  8. Allow to cool 5 minutes before slicing and serving.
