A creamy brie bunny in a salami bow tie surrounded by festive spring treats, fruits, veggies, meats and cheeses makes this Easter Bunny Signature Board as adorable as it is delicious.
Ingredients
The Brie Bunny:
- 3 (8-ounce) wheels brie cheese (1 for face, 1 for body, 1 cut for ears)
- 1 mini brie round (for the tail)
- 1 tablespoon raspberry preserves (for filling the ears)
- 2 blueberries (eyes)
- 1 raspberry (nose)
- 2 small slices reserved brie rind (for mouth/teeth)
- 6 fresh chive pieces (whiskers)
- 3 slices salami (for bowtie)
Mini Bowls:
- 1/4 cup raspberry preserves
- 1/4 cup spinach dip
- 1/4 cup honey
- 1/3 cup mini milk chocolate eggs
Cheeses:
- 1 cup cheddar cheese cubes
- 8 ounces dill Havarti block, sliced
Meat:
- 7 slices salami
Fresh Produce:
- 2 bunches green grapes
- 5 strawberries, halved
- 1/3 cup raspberries
- 1/3 cup blueberries
- 18 baby carrots
- 16 snow peas
- Fresh parsley (for cheddar cheese and carrot greenery tops)
Dried Fruit & Nuts:
- 1/3 cup dried apricots
- 1/3 cup sesame honey cashews
Crackers:
- 12 round pita crackers
- 12 butterfly-shaped golden butter crackers
Instructions
- Build the Brie Bunny: Place one brie wheel slightly lower right of the center of the board for the body. Place the second brie wheel directly above it for the face.
- Using the third wheel of brie, cut out two long oval shapes to resemble bunny ears. With the tip of a sharp knife, lightly score an inner oval on each piece, then gently hollow out a shallow well without cutting through. Spoon raspberry preserves into the center, leaving a white brie border around the edges. Place the ears above the wheel for the bunny’s face.
- Place the mini brie round to the bottom right of the brie bunny’s body for the bunny’s tail.
- Add blueberries for the eyes and a raspberry for the nose. Using some of the remaining rind from the third wheel, trim two small oval shapes to resemble bunny teeth and place them just below the raspberry nose to create the mouth. Add three chives on either side of the raspberry for whiskers.
- Using three slices of salami, overlap two slices in the center and gently bunch them so the sides flare out to form the bow shape. Fold the third slice inward on both sides to create a narrow strip, then wrap it around the center of the bunched slices to form the middle of the bowtie and secure in place. Set the salami bowtie between the face and body.
- Place the raspberry preserves, spinach dip, honey and mini milk chocolate eggs in mini bowls and arrange them across the board.
- Shape cheddar cubes into a carrot silhouette in the bottom left corner. Add fresh parsley at the top to resemble carrot greens.
- Arrange baby carrots in a tight bundle at the top right to look like a larger carrot and add fresh parsley at the top to resemble carrot greens.
- Fan dill Havarti slices in the top left corner.
- Add bundles of grapes to the top middle and bottom right corner of the board.
- Line snap peas along the left side near the spinach dip bowl.
- Fold and layer remaining salami just above the bowl of honey.
- Layer round crackers near the bottom center. Arrange butterfly-shaped crackers along the right side of the bunny.
- Tuck dried apricots in the middle and honey sesame cashews at the bottom left corner of the board.
- Cluster strawberries, raspberries, and blueberries in open spaces along the top and bottom.
- Serve with cheese knives, spreaders, tongs, and a honey dipper. Enjoy!
