Ingredients:
- 1 and 1/2 pounds ground beef
- 3/4 cup plain bread crumbs
- 1/2 cup finely chopped onion
- 3/4 cup ketchup
- 1 large egg, lightly beaten
- 1 tablespoon Worcestershire sauce
- 4 cloves fresh garlic, minced
- 1 teaspoon kosher salt
- 1/4 teaspoon ground pepper
Topping:
- 1/2 cup ketchup
- 2 tablespoons light brown sugar
- 1 tablespoon Worcestershire sauce
- Chopped fresh parsley, for garnishing
Instructions
- Preheat oven to 350°F. Line a baking sheet with foil and spray with non-stick cooking spray.
- In a large mixing bowl, combine the ground beef, bread crumbs, chopped onion, 3/4 cup ketchup, lightly beaten egg, 1 tablespoon Worcestershire sauce, minced garlic, salt and pepper. Gently mix until well combined, but don’t overmix or this will result in a tough meatloaf.
- Shape beef mixture into an 8” long x 4” wide x 2” high loaf on the prepared baking sheet.
- In a separate bowl, make the topping by whisking together the ketchup, light brown sugar and Worcestershire sauce. Spread the sauce evenly over the top and sides of the meat mixture.
- Bake for 55-60 minutes or until an instant-read thermometer inserted into center registers 160°F. Let stand 10 minutes.
- Garnish with chopped fresh parsley before serving, if desired. Cut into slices to serve.
