Apple Mug Cake

Description

With your favorite fall flavors in a warm, single-serving treat, this Apple Mug Cake is the ultimate cozy cool weather dessert.


Ingredients

  • 1 tablespoon unsalted butter, melted
  • 2 tablespoons milk
  • 1/4 teaspoon vanilla extract
  • 3 tablespoons all-purpose flour
  • 1 and 1/2 tablespoons light brown sugar
  • 1/4 teaspoon ground cinnamon
  • Pinch of nutmeg
  • 1/8 teaspoon baking powder
  • Pinch of salt
  • 3 tablespoons peeled and finely chopped apple (Honeycrisp or Granny Smith)
  • 1 tablespoon chopped walnuts, optional


Instructions

  1. In a microwave-safe mug (8 to 10 ounce size), melt the butter in the microwave until just melted.
  2. Whisk in the milk and vanilla.
  3. Add the flour, brown sugar, cinnamon, nutmeg, baking powder and salt. Whisk until you have a smooth batter.
  4. Fold in the chopped apple and walnuts (if using).
  5. Smooth the batter into the mug with a spatula or the back of a spoon and clean around the edges a bit with a paper towel.
  6. Microwave on high for 90 seconds to 2 minutes, depending on the power of your microwave. It should rise and look set but moist.
  7. Let sit for 1-2 minutes to cool and firm up.
  8. Top with a scoop of vanilla ice cream, a drizzle of caramel syrup and more chopped walnuts, if desired. Enjoy!
