How to Make Rudolph Celery Sticks

  • Trim the ends of each celery stalk and then trim a very thin strip, lengthwise, off of the back of each stalk so they lay flat. Slice each stalk, crosswise, into thirds or fourths depending on the size of the stalks (you’ll need 12 sticks total).
  • Spread peanut butter in each celery stick.
  • Then arrange pretzel twist halves, torn sides facing outwards, for the antlers.
  • Create the eyes by pressing two white chocolate chips, pointed sides down, into the peanut butter just under the antlers. Then place the mini chocolate chips, pointed sides up, in the middle of the white chocolate chips, securing them with a tiny dot of peanut butter.

  • Press a raspberry below the eyes for Rudolph’s nose. If the raspberry is too big, slice some of the bottom of it off so it is proportionate to the size of the celery stick.

  • Sprinkle a little powdered sugar on the top third of each Rudolph to make it look like snow on the antlers.

Because bananas tend to brown relatively quickly, I don’t recommend making these too far in advance. But if time is not on your side, you can toss banana slices in a bit of lemon juice to slow the browning process.

What to do with Thanksgiving Leftovers

It’s inevitable. And the end of a big family dinner, there are tons of leftovers you’re not sure what exactly to do with. I have an answer! This Thanksgiving Leftovers Sheet Pan Quesadilla is a creative way to use up that turkey and stuffing in a warm, inviting dinner everyone will love.

Thanksgiving Leftovers Sheet Pan Quesadilla by The BakerMama

Layers of leftover pulled turkey, cranberries and stuffing all covered in cheese and wrapped up in crisp, buttery tortilla. Serve it warm with cranberry sauce and leftover turkey gravy for dipping. Together with my Thanksgiving Leftovers Sandwich Board and my Turkey and Cornbread Dumplings, it’s one of my favorite ways to keep the holiday yumminess going another meal!

What is a Sheet Pan Dinner?

A sheet pan meal, or a sheet pan dinner, is an easy, one-pan dinner you make on a sheet pan! It’s one of my favorite ways to prepare dinner for my family without a ton of fuss. Some of my favorite sheet pan recipes are:

What’s a sheet pan? A sheet pan (you’ll also hear it called a baking panbaking sheet or sometimes a rimmed cookie sheet, which is why it can be confusing), is usually a rectangular, flat aluminum pan with a rim around it.

A full sheet pan (that’s what I use) measures about 17″x12″. They’re super versatile and no kitchen is complete without one! Note: a cookie sheet can be another pan entirely, because some, unlike a baking sheet, do not have a raised rim.

Can I use parchment on my sheet pan dinner? Short answer: usually. For this recipe, the tortillas need butter in order to get crispy. So you can use foil to keep your pan clean–no parchment–but follow the instructions and butter the foil instead.

In most cases, parchment paper or aluminum foil are great for making clean-up quick! You can use parchment to line your sheet pan unless you’re going to use the broiler. Parchment paper will catch fire under a broiler, so opt for foil in that case.

What Do I Need to Make a Thanksgiving Leftovers Sheet Pan Quesadilla

Thanksgiving Leftovers Sheet Pan Quesadilla by The BakerMama

How to Make a Thanksgiving Leftovers Sheet Pan Quesadilla

  • Preheat oven to 425°F and coat the inside of an 18×12 rimmed sheet pan with butter, making sure to cover completely.
  • Lay 7 tortillas on the sheet pan, starting with the corners and overlapping a bit to cover the entire pan, leaving about two inches hanging over the edge of the pan.
  • Cover the tortillas evenly with 2 cups of the shredded cheese.
  • Spread evenly with the leftover turkey meat.
Thanksgiving Leftovers Sheet Pan Quesadilla by The BakerMama
  • Add an even layer of crumbled stuffing and dollops of the cranberry sauce.
  • Top with the remaining 2 cups shredded cheese.
  • Lay 2 tortillas down the middle of the fillings. Fold the edges of the tortillas left hanging over the pan to cover the filling completely. Use a toothpick to hold the edges in place, if needed.
  • Butter the bottom side of a second rimmed sheet pan. Remove the toothpicks and place on top of the tortillas, buttered side down, pressing it down just a bit.
Thanksgiving Leftovers Sheet Pan Quesadilla by The BakerMama
  • Bake for 30 minutes. Remove top sheet pan and let bake for another 5 minutes or until golden brown all over the top.
Thanksgiving Leftovers Sheet Pan Quesadilla by The BakerMama

How to Serve and Store a Thanksgiving Leftovers Sheet Pan Quesadilla

To serve, cut into squares and serve with leftover gravy, cranberry sauces and chopped fresh herbs.

How do I save leftover sheet pan quesadilla? Place the squares in an airtight container and store for up to five days in the refrigerator. To reheat, place in the oven at 350°F to heat through and re-crisp.

Can I freeze a sheet pan quesadilla? Yes! Just slice into squares and let cool completely. Place each square in a freezer-safe baggie individually or all together with parchment paper between each slice and then into the freezer.

To reheat from frozen, I recommend reheating in the oven so they’re not mushy.

  • Whisk until thin and of drizzling consistency. If it gets too thick, add a little more milk. If it’s too thin, whisk in a little more powdered sugar.

Just Right

Now here’s casual appetizer that’s ready to be the center of attention! These Toasted Tortellini Bites take pre-packaged tortellini and add a savory, seasoned breadcrumb coating that’s toasted to perfection. They’re just right for dipping in warm marinara! Just delicious!

Toasted Tortellini Bites by The BakerMama

Bite-Sized and Blissful!

One day I took the same pre-made cheese tortellini that I use in my favorite Tuscan Tortellini Soup and made it crunchy and dip-able. And y’all, there are so many things I love about this appetizer. It’s my favorite combination of pasta, cheese and marinara. And because they’re toasted and not deep-fried, there’s so much less mess to clean up! Bite sized and blissful!

To freeze, allow to cool completely before placing in a freezer safe bag or container. Store in the freezer for up to three months. Thaw overnight in the refrigerator before reheating in the oven.

Homemade Chicken Noodle Soup by The BakerMama

The Meal that Feels Like a Hug

Friends, when it comes to comfort food, this Homemade Chicken Noodle Soup recipe can’t be beat! It’s one of my favorite easy recipes to make in cooler weather. Hearty enough to serve for dinner and light enough to reheat for lunch, it’s a one-pot meal everyone loves! It’s sure to become a favorite in your house, too.

Homemade Chicken Noodle Soup by The BakerMama

What Goes in Chicken Noodle Soup?

  • Chicken – I use shredded white meat chicken from a rotisserie. You can add or substitute chicken thighs, too.
  • Vegetables & Herbs – onions, celery, carrots and parsley bring so much fresh flavor and texture to this soup!
  • Frozen Peas – If you use canned peas, drain and rinse before adding to the broth. Be careful not to overcook, though, as canned peas will get mushy.
  • Egg Noodles – Feel free to use your favorite pasta (fusilli or rotini work great).
  • Chicken Broth – Chicken stock works, too. If you substitute bouillon for broth, dissolve 1 bouillon cube (or 1 teaspoon bouillon granules) into 1 cup of boiling water for every cup of broth. For example, this recipe would require 3 chicken bouillon cubes dissolved in three cups boiling water.
  • Seasonings – Black pepper and Italian seasoning and a hint of lemon! If you like to cook with bay leaves, you can add one to the broth while it’s cooking. Remember to remove before serving.

How to Make Homemade Chicken Noodle Soup

  • First, melt the butter in a large soup pot over medium heat. Then add onion, carrots and celery.
  • Cook, stirring occasionally, until tender, about 5 minutes. Stir in garlic until fragrant, about 1 minute.
  • Next, add the flour and cook for another minute.
  • Then whisk in the chicken broth, salt and pepper.
How to Make Homemade Chicken Noodle Soup by The BakerMama
  • Stir in the shredded chicken breast and stir while adding the noodles. Let simmer until the noodles are tender, about 8 minutes. Stir in peas and let simmer for another 2-3 minutes until warmed through.
Homemade Chicken Noodle Soup by The BakerMama
  • Reduce heat to low; stir in fresh parsley, Italian seasoning and lemon juice. Finally, season with salt and pepper, to taste.

How to Serve and Store Chicken Noodle Soup

Serve hot. To store leftover soup, allow it to cool fully. Store in an airtight container in the refrigerator for up to five days.

To freeze, be sure let the soup cool completely before storing. Soups are best stored in plastic containers. This storage container set is my absolute favorite because it has various sizes for storing different amounts.

To reheat, thaw in the fridge over night and then heat in a sauce pan over medium-low heat, stirring occasionally. Or microwave on 50% power one minute at a time until desired hotness.

What Goes with Chicken Noodle Soup?

If you’re in search of comfort, classic chicken noodle soup goes great with your favorite carbs. Serve chicken noodle soup with sandwiches, biscuits, or homemade bread.

  • Grilled Cheese: Knowing how to make great grilled cheese can turn a gray day into a great day! A warm, melty grilled cheese with a crisp butter outside and a gooey melted center is the ultimate comfort food.
  • Homestyle Buttermilk Biscuits: Flaky, buttery, comforting goodness made from simple ingredients. They’re wholesome, delicious and sure to be a crowd favorite!
  • Grilled Cheese Roll Ups: Everyone loves these Grilled Cheese Roll Ups! They’re quick to make, easy to eat, and fun to dip in sauce or soup.
  • 5-Ingredient Homemade French Bread: Perfectly crusty on the outside, light and fluffy on the inside, this bread is just waiting for a smear of butter. And with only five ingredients, it’s surprisingly simple to make and so delicious to eat!

More Comforting Soups Your Family Will Love

Serve up a meal that fills their bellies and puts a smile on their faces. A hot bowl of soup is the perfect winter dinner!

  • Homemade Chicken Tortilla Soup: This homemade take on Chick-fil-A’s Chicken Tortilla Soup tastes even better than the original. And you can enjoy it year-round and even on Sundays!
  • Tuscan Tortellini Soup: A comforting one-pot meal that’s perfect for a chilly winter day. It’s so easy to make and is bursting with delicious Tuscan flavors!
  • Broccoli Cheddar Chicken Soup: Packed with fresh broccoli, shredded chicken and creamy cheese, it makes for the perfect dinner on a chilly night!
  • Baked Sweet Potato Soup: Loaded with cheddar cheese, bacon, sour cream and onions, this is the ultimate in comfort food!

You don’t have to keep going back to the fire to enjoy this s’mores dip. Just grab your favorite dippers (everything goes!) and get in there.

What do you need to make S’mores Skillet Dip?

We love this flavor combo so much, I once looked up who invented s’mores. And what do you know! It was the Girl Scouts who first paired a toasted marshmallow with a chocolate bar and graham crackers. Smart cookies! And now you can get that s’mores flavor without a fire. All you’ll need is:

S'mores Skillet Dip by The BakerMama

How to Make S’mores Skillet Dip

  • First, preheat the oven to 375°F.
  • Then place the chocolate chips in a mini (5.4-inch) cast iron skillet or oven-safe skillet and place the marshmallows on top.
  • Bake for about 10 minutes or until the marshmallows are golden brown and toasted and the chocolate is melty.
  • Serve with dippers like graham cracker sticks, pretzels, vanilla wafers and cookies. Enjoy!

5 Ways to Roast Marshmallows for S’mores

No campfire? No problem! There are so many easy ways to to make s’mores without a full flaming fire. You can make s’mores using your fireplace, gas stovetop, oven or grill to get those marshmallows roasted to perfection. A microwave works in a pinch, too!

  • Fireplace: A fireplace is as close to a campfire as it gets! Light the fireplace and roast the marshmallow on a long skewer over the fire, but not in it! You want it to be close enough to roast the outside of the marshmallow and slowly melt the inside. Roast to desired toastiness! Be careful not to let the marshmallow drip into your fireplace.
  • Gas stovetop: Simply skewer your marshmallows and use the flame just as you would with a real fire. And always, always supervise children when making s’mores with fire!
  • Oven: Just top a graham cracker (or whatever you’re using as your base) with one or two marshmallows, and place it in the oven underneath the broiler for a minute or so. If you’re using this method, make sure to watch the marshmallows closely underneath the heat, because they will roast quickly.
  • Grill: If we already have the grill going for our meal, we love making s’mores on the grill for dessert! Turn the grill to high heat and roast the marshmallows on a long skewer over the hot flame until of desired toastiness.
  • Microwave: You won’t get a roasted marshmallow when you make a s’more in the microwave, but it will be melty! Place a graham cracker, piece of chocolate and a marshmallow on a microwave-safe plate. Microwave on high for 10-15 seconds, watching it carefully as the marshmallow will puff up. Remove from the microwave and top with another graham cracker. These are best enjoyed right away!
