I seriously can’t believe we’re already talking back-to-school! Where did the summer go?

All three of my boys are going to be starting school this fall so I’m already thinking about a game plan for breakfast, lunches and after-school snacks. I’m going to try to bake and prepare as much as possible on Sundays so that we’re stocked and can easily serve up breakfast, pack lunches and be prepared for their hungry bellies when we get back home each afternoon.

These peanut butter banana oat bars are going to be making an appearance quite often! They’re filled with some of our most favorite ingredients and we could eat them for breakfast if we’re in a huge hurry, as a sweet treat in their lunch boxes, or with a glass of milk as an after school snack. We love ‘em!

It’s like eating oatmeal in a bar form that’ll keep you satisfied and energized for hours.

Description

Hearty Whole Wheat Peanut Butter Banana Oat Bars that make for a healthy breakfast or snack you can feel great about feeding your family!


Ingredients

  • 2 cups old-fashioned oats
  • 1 cup all-natural Whole Wheat flour
  • 1/4 cup light brown sugar
  • 1 teaspoon baking powder
  • 1/2 cup crunchy or creamy peanut butter
  • 1/3 cup honey
  • 1 teaspoon vanilla
  • 1 large egg
  • 1 cup mashed ripe banana (about 2 bananas)

Instructions

  1. Preheat oven to 350°F. Line an 8-inch square baking pan or dish with parchment paper and spray with non-stick cooking spray. Set aside.
  2. In a large bowl, whisk together the oats, flour, brown sugar and baking powder.
  3. In the bowl of an electric mixer using the paddle attachment, beat together the peanut butter, honey, vanilla and egg until well combined. Add the dry ingredients and mix until just combined. Stir in the bananas.
  4. Spread mixture evenly into prepared baking pan. Bake for 20-25 minutes. Let cool completely before lifting bars from pan and cutting into squares. Store in an airtight container.

    1. Hi Tiffany! Yes, but I would recommend adding another 1/3 cup mashed banana or peanut butter to make up for the moisture the honey adds to the recipe. Enjoy!

        I found this recipe in early 2020, and I have made them countless times since. The texture is the best. Somehow, though, mini chocolate chips were mistakenly omitted from the published recipe. 😉😉😋. 1/2 to 3/4 of a cup. Looking forward to yet another pan of them now…never disappoints.     1. Hi Lorena! I haven’t calculated the nutrition on these bars, but there are several nutrition calculators out there that you could use. Just Google nutrition calculator and enter all the ingredients in and it will calculate it based on the number of servings. Hope this helps! Enjoy!
