I recently hosted a pumpkin palooza brunch and these mini parfaits were part of each person’s place setting as an appetizer (or accompaniment of sorts) to the main brunch spread. Everyone loved them and gobbled them up quickly!

They’re so easy to make with just three simple ingredients and all of the pumpkin flavor and textures are just so yummy you won’t be able to put your spoon down.

I’m so obsessed with Noosa’s pumpkin yoghurt and Kroger’s Simple Truth Pumpkin Seed Pecan Granola Clusters. And when you combine them with some pure pumpkin in the middle, I get all giddy over how great it tastes. And how wholesome and filling it is.

And finally is a heaping handful of Kroger’s Simple Truth Pumpkin Seed Pecan Granola Clusters. I’m a sucker for good granola clusters and this granola is one of my new faves. Perfect pumpkin flavor, crunchy yet still easy to chew, and lots of bite-size clusters. Love it!

Ingredients

  • 11/2 cups Noosa pumpkin yoghurt
  • 11/2 cups pure pumpkin
  • 11/2 cups Kroger Simple Truth Pumpkin Seed Pecan Granola Clusters

Instructions

  1. Take one 4 ounce jar at a time and spoon 1/4 cup pumpkin yoghurt, then 1/4 cup pure pumpkin, then 1/4 cup granola. Repeat until you have filled six 4-ounce jars.
  2. Serve immediately or store covered in plastic wrap in the refrigerator until ready to serve.

Notes

This recipe makes six 4-ounce mason jars, but you could adapt to make whichever size parfaits you prefer.
