My Favorite PB&J

I just had to share one of our absolute favorite lunches that we enjoy a few times every week and are the most requested sandwich for the boys’ lunch boxes. We all love peanut butter and jelly sandwiches, but making them with our leftover Whole Wheat Banana Pancakes takes them to a whole new level of yumminess that we just can’t get enough of.

It’s not just our boys that love these fun sandwiches; Brandon and I are obsessed with them too! We’ll purposely make an extra batch of our favorite pancakes (in mini form though) on a Saturday morning to use for these sandwiches that day for lunch and throughout the week. So so yummy!

No sandwich bread? No problem!

Whip up a batch of our healthy Whole Wheat Banana Pancakes and then use the leftovers from breakfast and sandwich them together with your favorite peanut butter and jelly to create one of the most amazing peanut butter and jellies you’ve ever had!

What Do I need to Make Peanut Butter and Jelly Pancake Sandwiches?

  • Whole Wheat Banana Pancakes – we like them in mini form (about 2 tablespoons batter each) for these sandwiches
  • Peanut Butter
  • Jelly
  • Whole wheat flour
  • Light brown sugar
  • Baking powder
  • Egg
  • Milk
  • Vanilla extract
  • Ripe bananas

How to Make Peanut Butter and Jelly Banana Pancake Sandwiches

  • Make a batch of Whole Wheat Banana Pancakes or use the leftovers from breakfast. We like them in mini form (about 2 tablespoons batter) for these sandwiches.
  • Pair two similar sized pancakes together. Spread the bottom of one pancake with peanut butter and the bottom of the other with jelly. Sandwich together and enjoy!
  • Whole Wheat Banana Pancakes: In a large mixing bowl, whisk together the flour, brown sugar and baking powder. In a separate bowl, whisk together the egg, milk and vanilla. Add the wet ingredients to the dry ingredients and stir until well combined.

  • Fold in the mashed bananas.
  • Heat griddle over medium heat. Spray with cooking spray. Using a 2-tablespoon cookie scoop or tablespoon, to scoop 2 tablespoon size scoops of batter onto the heated griddle.
  • Cook until the batter starts to bubble a bit on top and the bottom is evenly browned. Flip and cook until both sides are lightly browned.
  • Remove to a baking sheet while you cook the rest of the batter.

  • Spread one pancake with peanut butter and the other with jelly or jam.

How to Store Banana Pancake Sandwiches

Store already prepared sandwiches in an airtight container or plastic bag in the refrigerator for up to three days. Allow to sit at room temperature 10 minutes before serving.

Store plain banana pancakes in an resealable baggie in the refrigerator for up to a week or in the freezer for up to three months. Let pancakes come to room temperate when ready to make a peanut butter and jelly sandwich or warm in the microwave for 10-15 seconds.

  • 1 and 1/2 cups whole wheat flour
  • 2 tablespoons light brown sugar
  • 2 teaspoons baking powder
  • 1 large egg

  • 1 cup mashed ripe banana (about 2 bananas)
