Ready to Eat!

These Baked Pizza Taquitos are a shoo-in during the week! The boys literally devour them. They’re so easy to make that I usually let the boys help me to keep them busy so they’re not begging for dinner while I’m trying to get it on the table!

I’m so excited that I get to share some of the easy weeknight dinners that keep my family satisfied and me sane during the craziness of the week! With four very busy growing children, if I don’t have dinner ready when they’re ready to eat, then they’re literally digging in the pantry and climbing on the outside of the fridge. So I have to think ahead and have easy meals ready to go when they’re ready to eat!

So Easy, So Good

It doesn’t get much easier than these, my friends! Classic pepperoni pizza toppings rolled in a multi-grain flour tortilla and then baked to crispy melty yumminess! What’s not to love?! We love dipping them in pizza sauce or ranch dressing and serving them alongside a big salad or cut-up veggies for a winner of a dinner!

What Do I Need to Make Baked Pizza Taquitos?

  • Multi-grain or whole wheat tortillas
  • Pizza sauce
  • Shredded mozzarella cheese
  • Sliced pepperoni
  • Toothpicks
  • Baking sheet
  • Cooking spray

How to Make Baked Pizza Taquitos

  • First, preheat oven to 425°F. Spray a large baking sheet with cooking spray and set aside.
  • Place a tortilla on a flat surface. Spread with 1 tablespoon pizza sauce. Sprinkle with shredded cheese and place 6 pepperonis down the middle of the tortilla.
  • Tightly roll the tortilla up and secure with a toothpick. Place seam side down on the prepared baking sheet. Repeat with remaining tortillas and fillings.
  • Spray the top of each taquito with cooking spray. Bake on the top rack of the oven for about 15 minutes or until tortillas starts to crisp and brown and the cheese starts to melt out the ends.
  • Let cool for 5 minutes before serving. Serve with more pizza sauce for dipping, if desired.

  1. I mean, you know an exclamation mark is used when you’re exclaiming, right? Are you really exclaiming that much? You must just be permanently shouting.

    It’s ‘a shoo-in’ as well. Not shoe. As in the verb ‘shoo’. Not the noun ‘shoe’. To shoo something away. Or in this context used in horse racing where a horse would ‘shoo’ the race letting another horse win. It would have been preplanned before the race making the horse you knew was going to win a shoo-in.

I haven’t made these yet. but for Melissa, if you want to make ahead. try using slice of mozzarella, or putting the cheese on first, then only use a very small amount of the sauce, or sip the sauce altogether they will be dipping in sauce anyway. just ideas. hope it works out. I love making things ahead. Much easier.

  5. Can you make these up ahead and not bake for after school snack?
    didn’t know if they’d get soggy…

    1. Hi Melissa! It’s definitely worth a try. I can’t imagine they would get too soggy since you just put a little sauce on there. And if you keep them in the refrigerator until you’re ready to bake them, that will help prevent everything from getting soggy. Let me know if you give it a try! Enjoy!
